RSBC Week 4
Well, this is super late because I've been a slacker and Ruby has had a mysterious fever, but I figured I might as well report my week 4.
Last week I ran 3.2 miles and swam 400 meter plus I did some yoga. The swim was cut short because I went on Saturday and they had a swim meet there at the pool, but I still met my goal.
I met my goal to do the half iron-man for the swim and run portions.
This week's cooking challenge was cherries and honey. I couldn't find any fresh cherries at the store though and didn't want to buy canned, so I didn't do it. Although, I did have a brilliant idea after the fact. I could have made homemade granola with honey and dried cherries. That would have been good.

RSBC Week 3
This week I was preoccupied with other things and my kids slept terribly. If it wasn't for this challenge, I probably wouldn't have worked out at all. So, I guess I'm grateful to have challenged myself to do something so I don't just sit on my butt all February like normal. This week I ran 3 miles, and swam 700 meters.
My totals for the month so far:
Run: 10 miles
Swim: 1900 Meters
The distances for a half ironman are 13.2 mile run and 1.2 mile swim (or 1930 meters). All I have to do is run 3.2 miles and swim 30 meters. I think I can do it. I might even try to bike once.
The cooking challenge was to combine squash and chocolate. At first I was thinking, "what? those two can't possibly go together." Then I remembered zucchini bread, and pumpkin cookies. I thought I would try something new though so I made some Butternut Squash Bread and added chocolate chips to it. It was really good.

RSBC Challenge Week 2
So, I'm a little late, but here's what I did last week.
Ran 4 miles, Swam 600 meters, 1 yoga workout video
I haven't done any biking yet. I do have a bike trainer I could set up but no way of tracking my miles. I could just do it for a set time, but I may be running out of time and have to just do the run and swim portion.
The cooking challenge was to combine ginger and carrots.
I made a Thai Orange Chicken recipe that I found on Allrecipes.com It was actually pretty good.

Run Swim Bike Cook Challenge
My friend Lizzie does this Run Swim Bike Cook Challenge every year. I've never participated in it, but I figure that since I'm planning on doing a triathlon in May, I might as well get started now. I didn't find out about it until Thursday last week, but we'll see what I can do. You are supposed to try and complete an iron-man within the month as well as complete a cooking challenge each week. There is also an option to do a half iron-man and I think that's what I'll do. I'm still a little unsure how I will work in the biking.
So here's what I did last week. I ran 5k (3.2 miles) and swam 600 meters. I also did a power sculpt dvd, but I'm not sure if that counts for anything.
The cooking challenge was to combine beet greens and eggs. I kept it simple and just hard boiled a couple eggs. I washed and cut up some beet greens and mixed it with some fresh spinach to make a salad. I topped the salad with the cut up hard-boiled eggs, tomatoes, and some ranch dressing. It was a pretty basic salad, but it was yummy.
